Heat and Control’s MasterTherm is a versatile prepared foods fryer that uniformly fries batter, breaded and uncoated poultry, meat, seafood and vegetable products. Its proprietary thermal fluid heat exchanger uses a series of longitudinal two-pass U-tubes to maintain temperature uniformity across the width and length of the fryer. Each 22-foot-long module has two-zone cooking controls.
