Organic chicken processor D’Artagnan, LLC, Newark, N.J., launched a new artisanal organic, air-chilled chicken that is free-range and antibiotic- and hormone-free.
Air-chilling is critical because it means that no additional water or chemicals are added to pad the weight. As a result, chickens do not absorb water, so the consumer is paying for chicken and not adulterated H2O. Plus, air-chilled chickens are juicier, more tender and retain the rich, natural flavor of the bird. And, without the added water, air-chilled chickens cook even more quickly.
These new air-chilled chickens were raised by small Amish family farms in Lancaster County, Pa., and are hand-processed in a low-volume environment. Plus, they boast a farm-to-table audit trail.
