Dairy Briefs: While some businesses are cutting back operations and personnel, one that isn't isPaceDairy, a 35-year-old cheese processor in Rochester, Minn., reports the Minneapolis Star-Tribune. A private label supplier of shredded, natural chunk and specialty cheeses for Kroger Co., Pace had installed a new shredded cheese line in January and now expects by April to have it running, creating the need for 30 more jobs. By the end of the month, Pace will be operating four lines and running three shifts, the newspaper reported. . . .
