Dairy foods processorForemost Farms USA, Baraboo, Wis., said it expects by early 2011 to complete an expansion at its Appleton, Wis., mozzarella cheese plant. Officials said the company recently received a $3.1 million special agricultural facilities grant from theWisconsin Department of Agriculture.

Foremost President Dave Fuhrmann said the company intends to double production capacity in Appleton, which currently processes 65 million pounds of mozzarella for pizza, foodservice and cheese converter markets. Officials hope to boost annual capacity to up to 130 million pounds.
