LaClare Farms, Malone, Wis., introduced fresh goat cheese, after finalizing the acquisition of Heartland Creamery, Newark, Mo., in December 2017.
“This acquisition gives us the opportunity to branch out into the Chevre category,” says Katie Fuhrman, head cheesemaker. “It has allowed us to round out our goat cheese offerings. As with any cheese, the ‘secret’ is great milk. Our cheeses can only be as great as the milk we start with. It all starts on the farm, and we do our best to show off the excellent quality goat milk we get to work with. Or, as I always say to people, my job is to not screw up the fantastic milk I start with.”
LaClare Chevre is available in both retail and foodservice in Original, Honey, Cranberry Cinnamon and Garlic and Herb varieties.
