Carr Valley Cheese Co., La Valle, Wis., debuted Reserve Gouda, a new limited-release product with a twist.
The cheese starts with fresh cow milk delivered daily from a network of small, local farmers. Using traditional techniques, the cheese is then carefully crafted with special cultures. The 10-pound wheels are then aged under watchful eye for over 9 months to achieve peak flavor.
“You can’t replicate this cheese. It has fruity and floral notes that are only developed by the terroir—the driftless region of Southern Wisconsin,” says Sid Cook, owner. “We’re really proud of this cheese. It’s quickly become a favorite. It’s accessible and elevated, but most of all, it stays true to our commitment to small batch-quality products using fresh and simple ingredients.”
“We wanted to keep the flavors of a traditional Gouda, but also embody our Wisconsin heritage,” says Dave Christoff, national sales manager.
Carr Valley Cheese Reserve Gouda is available at select retailers.
